Avocado with pineapple salsa
Avocado with pineapple salsa is perfect for your healthy afternoon meal or a light dinner. It is also a perfect choice when you are trying to lose weight.
Ingredients
- pineapple - 1/2
- yellow pepper - 2
- chili pepper - 1 small
- ginger - a small piece, fresh
- sea salt - a pinch
- lemon juice - 2 tablespoons
- avocado - 2
- coriander leaves - a handful
- dried chili peppers - for decoration
Instructions
- Peel the pineapple. Cut it to quarters and cut out the center. Then cut the pineapple into small cubes. Clean the pepper and cut into small cubes. Remove the seeds from chili pepper and cut into very fine strips. Peel the ginger and grate in a bowl.
- Mix the pineapple and pepper cubes in the bowl. Add chili pepper and juice squeezed out of grated ginger. Flavor with a pinch of salt and a spoonful of lemon juice and stir.
- Cut the avocados and remove the kernels. Put the pulp off using a spoon. Half of the avocado is sprinkled with lemon juice and filled with pineapple salsa. Sprinkle them with coriander leaves and decorate with dried chili strips.
