A wonderful, healthy and surprisingly tasty beetroot soup that is very simple to make. Delicious, colorful and smooth vegetarian soup.
- Peel potatoes, carrot and red beet. Cut 8 very thin slices of beetroot and put them in a bowl filled with water. Cut all left vegetables into small pieces, sprinkle it in a pot, add stock so that all stays under water level. Boil slowly until soft. Then mix it with a blender. Add cream and bring to boil. Finally season soup with salt, pepper, sugar and vinegar.
- Dry red beet slices and fry them intensely in ho toil - turn them during frying. Take slices out, let drain on paper towel and salt a bit.
- Divide soup in bowls, always add 1 tablespoon of sour cream and garnish with two beetroot slices and green parsley. Serve with fresh bread.
