Hummus with beetroot and avocado
We all love hummus – a traditional dish made from chickpeas. But we decided to give it a bit of color and made Hummus with beetroot and avocado.
Ingredients
- beetroot - 120 g
- canned chickpeas - 200 g
- olive oil - 3 spoons
- garlic - 2 cloves
- salt
- black pepper - ground
- lemon juice - from 1/2 lemon
- avocado - 1
- coriander leaves - for topping
Instructions
- Wash and boil the beetroot. Let it cool down, peel and cut into the small pieces.
- Wash the chickpeas under the cold water and mix with oil into the mixture. Add the beetroot, chopped garlic, salt, lemon juice, and mix all into the smooth spread. Add more oil if needed.
- Let it rest in the fridge. Serve in the bowl with fresh pastry, sliced avocado and fresh leaves of coriander.
