Kohlrabi Baked in Pastry
Prepare tasty and wonderful looking kohlrabi baked in pastry which will surprise your visitors and family.
Ingredients
- kohlrabi - 4
- salt
- carrot - 1, small
- basil - 4 leaves
- plain flour - 150 g
- butter - 40 g
- fresh cheese - 130 g
- smoked cheese - 4 slices
- green parsley - a handful, chopped
- egg - 1
- Sauce:
- white wine - 200 ml
- shallot - 1, small
- yolks - 4
- butter - 120 g
- salt
Instructions
- Peel kohlrabis, put them in a pot filled with salted boiling water. Boil them slowly. Clean carrot. When kohlrabis are almost soft, add them to pot. Boil vegetables until it is soft.
- Let carrot drain and cut in small pieces. Chop basil well. Prepare smooth dough of flour, butter, cheese and a pinch of salt. Add carrot and basil in it and divide it into 4 parts. Roll each part in flan 3mm thick and lay a slice of smoked cheese on each one of them. Put some green parsley on top and cover with dried kohlrabi. Join dough above kohlrabi so that bundles get a shape of the crescent moon. Smear bundles with beaten egg and bake at 180 °C for 20 minutes until golden.
- Pour wine into a saucepan, add chopped shallot and boil it until 1/3 of wine's original volume. Then strain it in a metal bowl. When it cools off a bit, add yolks. Whip sauce in a water bath until it is thick. Gradually whip melted butter (drop by drop) in it and remove from flame.
