Ingredients
- avocado - 2
- lemon juice - from 1 lemon
- yellow pepper - 1
- cherry tomato - 150 g
- spring onion - 2
- chili pepper - 1
- parsley leaves - a handful
- olive oil - 2 spoons
- salt
- black pepper - ground
Instructions
- Cut the avocados in half, take off the seed and remove carefully the whole pulp. Sprinkle with lemon juice and cut into the pieces.
- Wash pepper and tomatoes, cut into the pieces. Wash spring onions and chili, chop finely. Chop the parsley finely. Peel and chop the garlic.
- Mix the rest of lemon juice, oil, garlic, salt and pepper. Add the chopped vegetable and stir gently. Fill the salad into the empty avocado skin and keep it in the fridge.
