Ingredients
- sweet potatoes - 400 g
- oat-flakes - 20 g, ground
- marjoram - 1 teaspoon
- garlic - 2 cloves
- salt
- black pepper - ground
- avocado - 1
- olive oil - 15 ml
- vinegar - 2 tablespoons
Instructions
- Cleanse sweet potatoes and grate finely. Add ground oat-flakes, 1 egg, marjoram, mashed garlic, salt, and pepper. Stir and fry on a dry non-sticky pancakes pan. Fry for about 2 minutes on both sides.
- Boil a pot of salty water. Break each egg into a ladle, add a little bit of vinegar, so that the egg closes and flip carefully into boiling water. Simmer for about 4 minutes, until the egg white is closed and white.
- Place the pancakes onto plates, place slices of avocado on the top, then eggs, season with salt, pepper and sprinkle with olive oil.
